In her new cookbook, Gursha—which loosely translates to “the act of feeding one another”—chef and restaurateur Beejhy Barhany (cofounding owner and executive chef of Tsion Cafe and author of Gursha) shares the rich culinary heritage of Beta Israel, or Ethiopian Jews. To celebrate her book's release, Barhany joins Leah Koenig (award-winning author of seven books including, Portico), Yael Raviv (COO of the Jewish Food Society and author of Falafel Nation), and Jeffrey Yoskowitz (co-founder of the Gefilteria and co-author of The Gefilte Manifesto) for a lively conversation about Jewish food traditions from Ethiopia, Italy, Israel, and beyond.
