We are the real deal. No joke. We’re idealists with a mission and we couldn’t settle for jarred gefilte fish anymore (or any other sad Jewish foods for that matter). We’re proud of our Ashkenazi culinary heritage and want others to be, too. Check out our story to learn more about how it all began.
WHERE IS YOUR STOREFRONT LOCATED?
The Gefilteria does not have a physical storefront. We produce and curate pop-up dining experiences around the country and we do catering in and around New York City. SO YOU PRODUCE AND SELL GOURMET JEWISH FOODS. IS THAT ALL THAT YOU DO?
No way! We do way more than produce the highest quality gefilte fish on the market. We also host dining events in collaboration with interesting partners and also teach and lead demos around the globe. We’ve also published a cookbook! DO YOU SELL HORSERADISH?
We don’t, but we do give away a fantastic and easy recipe for our signature carrot citrus horseradish relish, right here on our website. You can find that recipe and a recipe for a more traditional beet horseradish in our cookbook, The Gefilte Manifesto.
WHY DOES The STRIPE On my Gefilte Fish LOOK A BIT PALE?
Because we never use artificial dyes or coloring, the brightness of the trout and salmon strip varies seasonally and with every batch. Don’t worry. Every loaf is unique and every loaf is equally delicious!
DO YOU SHIP OR DELIVER GEFILTE FISH?
Our online partners do the shipping for us, and they’ll ship (and often deliver directly) anywhere in the continental U.S. Our gefilte is blast frozen to retain freshness, so it’ll arrive at your door frozen and can be stored in the freezer or placed in the refrigerator to begin thawing. Note that we encourage customers who are friends in the same city to place orders together and have them shipped to a central location. Shipping costs can be shared.
WHAT MAKES YOUR PRODUCTS SO SPECIAL?
The Gefilteria’s products are made using old-fashioned methods and the highest quality ingredients. We devote attention and care to the ingredients we use and the aesthetics, too. Unlike other gefilte fish makers, you will not find our gefilte fish in a jar where it is trapped in gelatinous muck. Our gefilte fish is baked fresh, blast frozen and needs simply to be thawed and served.
ARE YOUR PRODUCTS KOSHER-CERTIFIED?
Our gefilte fish is certified kosher by the OU. Check out the kosher agency’s websites for more information on the OU.
HOW MUCH GEFILTE AND HORSERADISH SHOULD I BUY?
Each loaf of our 24 oz. gefilte fish provides approximately twelve appetizer portions (sometimes even more depending on how you slice it).
WHAT KIND OF FISH DO YOU USE FOR THE GEFILTE?
Our gefilte fish is made from high quality, responsibly sourced whitefish, pike, steelhead trout and salmon. Our whitefish and pike are from the Great Lakes and are best choice fish options according to the Sustainable Seafood Guide from the Monterey Bay Aquarium. Our trout rates highly, too. Our salmon sourcing varies depending on the season, but we strive for the best Pacific or Canadian salmon available. We know you’ll be able to taste the difference that freshness and sustainability make!
IS YOUR GEFILTE Fish GLUTEN FREE?
Yes! There is no matzo meal or any breadstuff in our gefilte fish. However, our facility is not certified gluten free, so those of you with severe gluten allergies should be aware that trace amounts of gluten may be present.
No, our gefilte fish is not currently sugar-free.
WHAT ELSE IS IN YOUR GEFILTE FISH?
Spanish onions, fresh eggs, olive oil, salt, sugar and white pepper.
I HEAR YOUR GEFILTE IS FROZEN?
Due to popular demand, we are blast freezing our cooked gefilte loaves to maintain freshness and allow for shipping and advance purchasing! Unlike other frozen loaves, ours arrive completely cooked and ready to serve once thawed.
