Beet Kvass

Early on The Gefilteria pushed for the revival of Kvass, fermented tonics from eastern Europe, and in 2013-2014 produced limited batches of Beet Ginger Kvass for sale in specialty stores around Brooklyn and Manhattan, and occasionally fermented to order for Broadway stars. The team created a kvass cocktail to serve at the James Beard Passover seder in 2013, and in 2016, The Gefilteria’s beet kvass recipe was published in The Gefilte Manifesto.
